In the heart of Test Valley, our partners, the renowned Houghton Fishing Club, supply us with responsibly sourced trout straight from the river test. The club, founded in 1822, looks after about 13–15 miles of river near Stockbridge, some of the best trout water in the area.
Once the fish are delivered to us the trout are then dry-cured and cold oak-smoked.
We offer two products sold over the counter in our butchers:
- Large-chunk smoked trout pâté, a favourite with our customers.
- Whole trout sides, ideal for slicing at home into canapés or simply serving with a squeeze of lemon and a sprinkle of pepper.
